We sourced from Clearview Farms in Branchport, NY. Harvest took place on October 07, 2020. Grapes were then crushed, and pressed, with juice centrifuged to 0.1% solids. Sequential fermentation starts with Pichia Kluyveri for 48 hours followed by S. cerevisiae “Steinberger”; 64ºF. Fermentation arrested on November 26, 2020 by centrifugation with cooling, and cellaring in stainless steel.Pairings
